Quick meals for dinner
Lentil soup (add extra veggies and crushed tomatoes, finish with lemon juice and crumbled feta)
Fried rice (we make this with plain rice or riced cauliflower)
Crock pot chicken tacos (make extra to serve over lettuce for quick lunch)
Sweet potato kale hash (we make a big pan for the family)
Crock pot pulled pork (sometimes we substitute beer and/or apple cider vinegar for the ginger ale)
Sheet pan potatoes and chicken sausage (we like Trader Joe's and Aidell's sausage)
Taco bar (we use tofu or a mix of cooked lentils/toasted walnuts often in place of meat)
DIY salad bar (big bowl of greens plus veggie choices + protein choices + topping/dressing choices)

French toast (double dip in batter for extra protein) + bacon + fruit
Fancy oatmeal bar (my kids love this!): make a pot of steel cut oats and put out a variety of toppings: maple butter, nuts, coconut shreds, cream, chopped fruit, jam, whatever they like!
scrambled eggs with kale + bacon + fruit smoothies

Avocado egg toast - simple and filling!
"apple pie" (vanilla Greek yogurt, your favorite granola, chunky apple sauce, and maybe a little maple syrup or honey to taste)
